Thai Sweet Potato Soup

 



How about cooking a pot of this flavoursome Thai sweet potato soup for dad this Sunday?  It looks like another cold front is hitting Cape Town over the weekend so this soup may be just what you need to keep warm.  Orange flesh sweet potatoes and leeks cooked in coconut milk broth, red curry paste, garlic, ginger and coriander. A myriad of beautiful flavours that pack a punch. For a more mild heat, replace red curry paste with yellow.

This soup is an anti-inflammatory power house with garlic, chilli, ginger and fresh coriander having a high vitamin and mineral content. Sweet potatoes are a low GI choice and have a high nutrient content (especially the darker orange flesh varietal) - they are high in fibre and Vitamin A. And did you know that coconut milk helps you burn fat? Wonderful! It’s the perfect mood boosting, nutrient rich soup that helps do away with a nasty cold too!



Thai Sweet Potato Soup

Serves: 6

1 T (15 ml) vegetable oil
1 bunch of leeks, thinly sliced
1 T (15 ml) grated ginger
2 cloves garlic, crushed
2 T (30 ml) red or yellow curry paste
500 g cubed orange fleshed sweet potatoes
500 ml weak chicken stock or vegetable stock
1 tin coconut milk
3 dried kaffir lime leaves
30g fresh coriander, roughly chopped
Fish sauce to taste

In a large heavy based pot, heat the oil and saute the leeks, garlic, ginger and paste together until softened and fragrant.
Add the sweet potatoes and saute for a minute then add the stock, coconut milk, lime leaves and half of the coriander. Cover and bring to a gentle simmer. Cook for +- 35-40 minutes or until potatoes are tender. Remove lime leaves.
Take pot off the heat, add the remaining coriander and use a stick blender to blend the soup until smooth (add more hot stock if you’d like a thinner consistency).
Season to taste with fish sauce
Serve garnished with extra coconut milk and fresh coriander leaves.
TIP: this soup freezes well
